Created in 1691, the Biscuit Rose is one of Reims’ finest treasures. It is the most famous regional speciality after champagne. Its recipe, based on eggs, egg whites, sugar and sifted flour, is simple yet challenging to master.
“At that time, bakers in Champagne, anxious to use the heat of their oven after the bread had been baked, came up with the idea of creating a special dough which, after being baked for the first time, was left in the bread oven to dry out.
This method is the origin of the word “bis-cuit”, which means that it is baked twice: first quickly and then more slowly. This tradition of double baking is still maintained today by the Fossier biscuit factory.
This double baking gives the Biscuit Rose a unique texture and a great capacity to absorb. These qualities make it the ideal ingredient for Charlottes and many other kinds of dessert such as strawberries, tiramisu, and cheesecake…

The Biscuit Rose, which is traditionally served with champagne, is a symbol of celebration. In addition to its pink colour, it is characterised by its crunchy and melt-in-the-mouth texture.
Ideal to nibble on its own, it can also be used in a variety of recipes. It is also available as a powdered ingredient.
The Fossier biscuit factory offers many other delicious biscuits including croquignoles, macaroons and meringues, dry biscuits, moelleux and madeleines, gingerbread, as well as other sweet and savoury treats.
A history fun fact
In 1775, these pink biscuits were served during the coronation celebration of Louis XVI and they became an immediate success. The baker became the sole supplier to the king. As nobles were not known to keep a secret, the popularity of the cookie spread across Europe. In 1845, a Monsoir Fossier took over the bakery.
Maison Fossier has been baking the prized biscuit ever since; the only bakery left in France that makes the Biscuits Roses de Reims.
The original recipe for Biscuits Roses de Reims is a closely held secret at Fossier's bakery, but the cookie itself is made from just eggs, flour, sugar, vanilla, and a leavening agent. The key to its success lies in the preparation and technique, which demand a level of expertise.
